Lessons Learned Condensation Drain

I'm posting to share an experience and really to get comments on this "hot mess" and advice from here.

A little over a week ago, I noticed that the AC would run cold at the registers for 5, 10 sometimes 15 minutes and then blow warm room temperature air after that for potentially hours. Called a tech out, he said that a 3.5 ton unit is undersized for a 1800sqft house, I read plenty enough to know this is very debatable and it worked great last summer, but he says he'll just change the fan speed from low to medium.

Problems continue. Starts getting warm between 2:00pm and 6:00pm. This is Florida, granted its hot but 85F in the house when it's 91F outside seems a little bizarre to me because the system is less than two years old. Also noticed the compressor and fan weren't staying on outside. So today I took it upon myself to 1) add insulation around the return ducts in the attic 2) clean the evaporator coils 3) clean the inside of the outdoor condenser and lastly 4) clear the drain line out with a shop vac.

Once again, registers are at 64F for 10 mins, back to 78F afterwards. I go outside and notice the drain line has a steady flow of water convincing me there was a clog based on what I observed prior days, then I remember the Safe T Switch connected to the air handler and the notice about clearing it out every 180 days, I pop it open and take a look just out of curiosity and sure enough the float is jammed up, I clean it up and it's 3 hours later now and I'm sitting at 59F - 64F from registers. Turns out the condensation safety switch shuts off the compressor when triggered.

Question: Should the fan speed be moved back to low from medium now? Or should I leave it on medium?
