Need advice on new system

I work from home and the basement is where I reside. I am intimately familiar with the run times of my HVAC system as it is 6 feet from my desk on the other side of the wall.

We replaced: 20yr old 10 SEER 3 ton Single Stage American Standard AC 20yr old Single stage 80% American Standard Furnace

We installed: 3ton 16SEER AC Rheem model # RA1636AJ1 96% AFUE Two Stage Variable Speed Rheem # R96VA0852521MSB Rheem #RCF3621MTAM Col

Observations:

The unit runs much longer than the old unit although they are the same size. Is this normal with High Efficiency ACs?

There is condensation on the Air Supply Plenum? I never saw condensation on the old unit. Is this a problem and how is it remedied?

Is it common to pair a 3ton condenser with a such a large coil? The salesman said it was necessary to get the full efficiency ratings.

Here are the specific models being discussed directly from the quote:

We will install new Rheem model # RA1636AJ1, 3ton, 16.0seer, 1stage air conditioner, model # RCF3621MTAM indoor coil, and model # R96VA0852521MSB, 85,000Btu, 96% efficient, 2stage gas furnace with variable speed blower.

Is this too much for my 2400sq ft house?

Is the actual size or tonnage limited by the weakest link? (AC being 3 ton)

Anyways, I am just curious if this is common. Please help.

Here is the quote and price verbatim:

We propose to recover refrigerant per EPA guidelines, remove, and haul away existingequipment. We will install new Rheem model # RA1636AJ1, 3ton, 16.0seer, 1stage air conditioner, model # RCF3621MTAM indoor coil, and model # R96VA0852521MSB, 85,000Btu, 96% efficient, 2stage gas furnace with variable speed blower. We will reuse as much of the existing sheet metal, gas line, and electric circuits as possible. We will install new electric disconnect with whip, new 3” PVC venting, copper lines, drain system with condensate pump and drain tube to basement sink, Honeywell 8000 series touch screen programmable thermostat with wifi connectibility, and Aprilaire model 2410 media air cleaner.

NOTE: This system is eligible for a $250.00 rebate from LG&E, $400.00 state tax rebate from Kentucky, and $500.00 Federal tax rebate.

Total Price $6782.00

BTW, this is a reputable company. They installed the previous system and we've been on a maintenance contract for as long.
