Blower Speed and humidity removal

Should I be scared of a reputable HVAC company who is telling me that I need to increase the blower speed to remove humidity despite everything else I've read (including the air handler's manual they gave me) says otherwise? It even has a dehumidify mode that slows the blower.

The tech tells me that if the speed is slower then it causes the coil to get more water on it which will make the humidity worse.

Isn't that the point of the coil is to collect the moisture and then it drains out?
