New humidifier is not adequately humidifying my house.

I just had my furnace, AC coil, and pass thru humidifier replaced with all goodman brand units. The humidifier is a goodman he12 which says supports up to 2000 sq/ft. The installer said that this is the humidifier that works best for our house which is over 2700sq/ft. We've found that no matter how high we set the humidistat, we're not getting over 35% humidity. Brought this up with the installer and he said as long as we're not getting nose bleeds, we're fine and that too much humidity is a big problem and that we would just waste water with a bigger humidifier (the Goodman HE17). The humidifier that we had prior was a honeywell that if we set it to 20% the humidity would reach between 40% and 50% with ease. After a lot of arguing, the installer finally agreed to replace it for free, but is talking to me like i'm the bad guy and i'm ultimately making a mistake by putting the HE17 in. Am i making a mistake here? Should i be satisfied with the HE12?
