confused about 'single stage cooling' with 'variable speed' furnace

Hi reddit. New to this subreddit. Doing a HVAC/energy overhaul on my house: sealing, new insulation, (possibly) new ducts, and new HVAC unit.

I'm having a hard time understanding my options, because everyone seems to describe things slightly differently.

One system I'm being quoted is:

XR16 - 3.0 TONS, 16.0 SEER, 13.80 EER. SINGLE STAGE COOLING. VARIABLE SPEED XV80 FURNACE

Does this mean I only get the benefit of "variable speed" when heating, and not for cooling? From what I understand this isn't a two-stage or multi-stage A/C -- seems like that is a higher-end option than what is described above, no?
